Paprika
PAPRIKA OF MURCIA
Murcia paprika is the product that results from grinding totally red peppers of the ¿bola¿ variety, harvested when ripe, healthy, clean and dry. The quality of Murcia paprika is backed by the experience of the traditional huertanos, who have been producing it since it was imported from America. The peppers then were long and pungent. Due to the environmental conditions of this area in the south-east of Spain (subtropical Mediterranean climate with little rainfall and high temperatures, saline soils and few water resources) and also to the growing techniques, their shape became more and more rounded and their taste went from pungent to sweet. Notable among the organoleptic qualities of the paprika are a total sweetness, a characteristic penetrating strong smell, great colouring ability, oiliness and flavour. The colour is bright red. It presents a very stable colour and aroma.
